About the recipe

Mrs.Apettini is charming and with the beautiful, curly shape of the fusilli it not only looks good! It creates a great feeling in your mouth and gathers the delicate ricotta sauce and the freshness of spinach and lemon in its curves.

Products:

  • 400 g. Mrs. Apettini Fusilli

  • 500 g. Ricotta Cheese;

  • 100 g. Grated Parmesan;

  • 300 g. Cleaned and washed spinach;

  • 1 pc. Lemon;

  • 3 pcs. Garlic cloves;

  • 1 tbsp. salt;

  • 1/2 tsp. black pepper;

  • 3 tbsp. Extra Virgin Olive Oil

Method of preparation:

  1. Mix the ricotta cheese, parmesan, olive oil, crushed garlic, lemon zest, half of the salt and black pepper.

  2. Mix well and taste the sauce to make sure its taste is balanced;

  3. Meanwhile, boil the water and cook the Mrs.Apettini fusilli for 3 minutes. Drain them and set aside 1 cup (about 200ml. of the water) in which the pasta was cooked;

  4. Add the spinach to the pot of boiling water and blanch for 1-2 minutes;

  5. Drain the spinach and place it in a casserole (or suitable container), leaving 2-3 tablespoons of spinach leaves for decoration;

  6. In the pot, add the cooked pasta, 2/3 of the ricotta sauce, the cup of cooking water and mix well until you get a creamy consistency;

  7. Serve the Mrs.Apettini fusilli portion with a drizzle of olive oil, beautifully arranged blanched spinach leaves, a few generous spoonfuls of the sauce, freshly grated Parmesan, grated lemon or lemon slices, a pinch of salt and pepper;
